菠蘿子薑酸辣妙配 祛濕消暑

今日正當大暑時節,俗語有云:「大暑食菠蘿,小暑食芒果。」在炎炎夏日,吃當造的菠蘿最為解渴,皆因其纖維含量高兼味道酸甜,開胃又刺激味蕾。今日,一於帶大家食勻城中至靚菠蘿,再一嚐菠蘿入饌的魅力,齊齊開住個胃消暑!

[b]浸鹽水免敏感[/b]
菠蘿含纖維素,有利腸道健康,它亦含豐富維他命C,具極佳的抗氧化功效,亦能促進骨膠原的形成。根據《本草綱目》記載:「菠蘿,補脾胃,固元氣,制伏亢陽,扶持衰土,壯精神,益血,利頭目,開心益志。」故於炎夏最宜吃菠蘿消暑除煩,或在大吃大喝後用來消除食滯。不過,菠蘿所含的菠蘿蛋白酶和生物蟚,可能令人出現腹瀉、發癢等過敏反應。在進食前可先以鹽水略浸,可減低出現過敏反應的機會,又可引發其本身的甜味。而有腎病及胃病人士,則應避免進食菠蘿。

[b]日:沖繩種香飄飄[/b]
沖繩菠蘿出名多汁鮮甜,更是當地的特產之一。今次鐵板燒海賀日籍總廚長谷川克哉,用上香噴噴的沖繩菠蘿入饌。師傅教路,烹調沖繩菠蘿火候控制要精準,若火候過大、時間過長,除令菠蘿味道溜走外,更會帶出大量果酸,白白浪費了菠蘿的香甜。頭盤先有日本人最喜歡的漬物,師傅今次將沖繩菠蘿配上日本西瓜、蜜瓜及日本白酒,健康之餘,白酒能減輕酸味和增加口感,跟比較濃味的食材非常配合,是日本的流行吃法。主菜有鐵板香煎鵝肝配菠蘿,口感突出,煎香的鵝肝,惹味的菠蘿能中和油膩感。

[b]中:妙配子薑酸帶辣[/b]
逸東軒行政總廚譚強師傅就玩創新,他將當造的子薑配上菠蘿,但不是用來炒,而是用它們來煲湯。這道菠蘿子薑煲豬𦟌湯,除了菠蘿、子薑、還有蜜棗、豬𦟌,味道帶少許辣,加上菠蘿的微酸,極之開胃。一般來說菠蘿與肉是最佳拍檔,皆因菠蘿中的蛋白酶有助分解肉類中的蛋白質,令肉變得鬆軟入味。主菜方面,譚師傅特別設計了菠蘿荔芋香酥鴨,將荔芋和菠蘿鋪在鴨肉上一起炸,先吃到荔芋的味道,再慢慢滲出菠蘿的香味,可能菠蘿的酸度中和了鴨的油份,入口沒那麼油膩。
