材料
老薑        75克
去骨雞髀    2隻
辣椒        1隻
麻油        2湯匙

調味料
生抽        1湯匙
糖            1/2湯匙
米酒        2湯匙
老抽        1湯匙

做法
1. 老薑切粗絲,辣椒去籽切絲,去骨雞髀洗淨後切粗絲,備用。
2. 燒熱鑊,放入麻油及老薑絲,以慢火逼出香味。
3. 再轉大火後加入米酒,放入雞絲及辣椒絲一齊炒至雞絲約六成熟,最後,加入調味料炒至熟透,即成。

Ingredients
Mature ginger – 75g
Boneless chicken thigh – 2 pcs
Chili – 1 pc
Grapeseed oil – 2 tbsp

Seasonings
Soy sauce – 1 tbsp
Sugar – 1/2 tbsp
Rice wine – 2 tbsp
Dark soy sauce – 1 tbsp

Method
1.    Shred mature ginger and chili, wash boneless chicken thigh clean and cut into slices.
2.    Heat grapeseed oil in casserole, add mature ginger and turn to low heat until tender.
3.    Turn to high heat, add rice wine, boneless chicken thigh and chili, stir-fry well until 60% done.  Pour in the sauce mix until cooked.
