圖書館往往予人嚴肅安靜的感覺,但身處 103樓的「 The Chocolate Library」,氣氛絕對是輕鬆寫意。
人在高處,可倚落地玻璃窗遙望無敵海景,坐軟綿綿布梳化,舒服到不願郁,窗台放滿與朱古力有關的書籍,揭兩頁書吃件餅,與朋友天南地北,這頓下午茶真愜意。經典朱古力下午茶套餐,有三款鹹點和七款朱古力甜品,兩人份量剛剛好,行政餅廚 Richard:「因為食材有異和遷就口感,我選用不同濃度的法國 Valrhona朱古力製作甜品。」為配合圖書館主題,甜品用一個三層高迷你書架盛載,書架用橙色書套蓋着,遠看似本字典般厚的巨型藏書,很是精緻。「這書架有齊白、黑和牛奶朱古力,每款甜品的可可成份百分比都不同,以便混合食材後,不會變得過甜或過酸。」

七款甜點逐件數,一,個人至愛的白朱古力杯,三層紅白相間,中間一層白朱古力偏甜,上下兩層紅桑子啫喱帶酸,酸甜相撞反而吃出平衡,說齒頰留香太誇張,但長駐味蕾的甜絲絲感覺,歷久不散。二,朱古力紅桑子撻,造型似隻棋子,外層有撻皮圍邊,保持到脆身口感,入口發出清脆卜一聲。
嗜甜者,必愛特甜的橙香朱古力蛋白杏仁撻, Richard:「橙和朱古力是絕配,我用 70%可可成份做杏仁撻,中間有橙味果醬,真正甜到入心。」四,傳統貝殼蛋糕帶甜,通常以白色為主,這裏則呈啡色,為增加口感,還特別加入朱古力碎,女生必愛也。五,白咖啡軟凍朱古力撻,圓柱狀下層用撻皮包着朱古力慕絲,上層半圓形的是白咖啡慕絲,味道有點似 Cappuccino。六,雲石芝士蛋糕,朱古力藏在芝士內,兩者皆濃味,一撞,濃上加濃。七,朱古力拿破崙酥,一般做法是鮮果配酥皮,這裏玩朱古力層層上,由底而上依次序是朱古力 Brownie、薄脆和朱古力慕絲,兩小圓柱是朱古力忌廉,再上有朱古力薄片,咬一啖,有齊不同層次口感。
為免太甜膩,點心師傅 Bryan特別設計三款鹹點。一,可可朱古力包伴鴨肝醬,包身是朱古力,鴨肝醬圍一圈置中,再上撒朱古力碎,一啖一件剛剛好。二,造型似足壽司的薄荷煙三文魚三文治,三文魚底下有層香草忌廉芝士,包本身有淡淡薄荷味,感覺清新。三,迷迭香咖喱火腿三文治,火腿底下有層意大利醋醃番茄醬,包身帶咖喱味,口感濃烈。跟餐有茶、熱咖啡和熱朱古力選擇, Richard:「我建議喝杯茶,最能消滯。」

很多酒家都推出下午茶特價時段,但限制多多,食物水準也不見突出,感覺始終不夠高雅。
「 Portal- Work& Play」的下午茶餐「 East」很精緻,用古色古香的中式首飾盒作點心架,打開盒蓋和抽屜,每格都放滿小點心,餅房廚師:「談到 High tea,大家只會想起西式下午茶,我抽取東南亞地區的代表點心放入首飾盒,做個非一般 Tea set。」盒內的中式點心全由同酒店的米芝蓮中菜廳「明閣」負責,叉燒包不用蠔油撈豬肉,堅持用真叉燒做餡,肥肉瘦肉二八黃金比例;燒賣內餡則用手攪豬肉膠,極彈牙,絕非一般叮叮貨可比;北京填鴨卷,選用每日炭爐燒製的燒鵝,皮脆多汁,入口帶炭燒香味。

印度代表有雞卷和羊肉串,前者用自製粉皮包住雞肉和蔬菜,入口醬汁豐腴,後者把羊肉壓成長條形,燒好後沾自製薄荷汁,香而不羶。越南紙米卷晶瑩通透,中間捲着紫米和素菜,配酸汁和魚露汁吃,清新又惹味。最奪目的是新加坡海南雞飯球,用雞油、葱油和椰奶煮飯,醬汁只用辣椒醬,上放雞片,外形似壽司波,一啖一口嘴仔細細 OL剛剛好。
傳統點心吃夠了,打開最底層的抽屜,有驚喜!裏面放滿創意甜品,咖喱 Puff用素菜作餡料,配合脆身的甜味酥皮,餡料少辣,甜撞辣很惹味。布甸吃得多,香蕉味布甸很少見,口感竟有點似馬拉糕。最後的芒果椰汁飯,和一般芒果糯米飯不同,椰汁飯多一種獨特香味,甜而不膩。
